Cheesy Minestrone Cob Loaf with Fresh Herbs

A soup so good, you can have your bowl and eat it too!

SERVES: 4-6 | PREP TIME: 10MIN | COOK TIME: 20MIN | MEAL TYPE: TO SHARE

Ingredients

  • 1 packet of Pitango’s Organic Minestrone Soup
  • 1 large country loaf or 4 small cob loafs
  • 50g parmesan cheese, grated - more if no one’s watching!
  • Handful of aromatic oregano Handful of fresh basil leaves - mmm, makes a delicious difference

Directions

STEP 1
Preheat oven 180°c

STEP 2
Carefully cut the top of the large loaf/cobs and scoop out the bread to leave a hollow hole. Psst: make sure you keep the scooped-out bread for serving!

STEP 3
Bake loaf/cobs for 10 to 15 mins until lightly golden (so the soup doesn’t soak through the bread!)

STEP 4
Heat the hearty Organic Minestrone Soup according to packet instructions

STEP 5
Gently pour warm soup into golden baked loaf/cobs

STEP 6
Add a generous sprinkle of parmesan cheese and oregano

STEP 7
Bake for 8 to 10 mins until the cheese is bubbling - our favourite part!

STEP 8
Remove from oven, garnish with basil and serve with torn bread.
