Miso soup is the staple of a healthy Japanese diet. We can drink it anytime of the day, breakfast, lunch or dinner. This is a vegetarian-friendly broth - using a special blend of shiitake mushroom and Japanese kombu which is packed with umami flavours - an antioxidant explosion.

STOVE TOP

  1. Pour the Miso broth into a large saucepan and bring to a simmer.
  2. Add tofu and seasonal fresh veggies and simmer until cooked.
  3. Cook udon noodles as per pack instructions, drain.
  4. Dive the noodles, tofu, veggies and Miso broth between 2 bowls.
